How do they measure heat? The Scoville unit is the measurement of heat in a pepper or sauce. A quantity of pepper or sauce is dissolved until it can no longer be detected and then is recorded in units of 100. The higher the number the hotter the pepper/sauce. For example Bell peppers are so mild they don't even chart, their number is 0. But Jalapeño peppers chart at 3,500-8,000 scoville units, Cayenne 30,000-50,000 and we're not even halfway up the chart!
How can I put out the burn? The best way is with cold milk or any dairy product. They contain casein, which acts like a detergent that washes away capsaicin, the element in peppers that creates all that heat!
